阿茲海默症的特徵是存在具神經毒性的乙型類澱粉蛋白（amyloid β , Aβ） 在大腦中沉積。乙型類澱粉胜肽是由前類澱粉蛋白 (amyloid precursor protein, APP) 經由 α-、β- 和 γ- 分泌酶 (secretases) 的蛋白水解作用而產生，生成途徑有兩種，非類澱粉蛋白生成路徑 (non-amyloidogenic pathway) 提供大腦有益的神經營養作用，而類澱粉蛋白生成路徑 (amyloidogenic pathway) 形成具有神經毒性的乙型類澱粉胜肽，乙型類澱粉胜肽的錯誤折疊與沉積是阿茲海默症的病理學特徵之一。
